Tzatziki

Tzatziki is a seasoned concoction of cucumbers, yogurt, olive oil and yogurt originating in Greece and Turkey.

Here are some tips for making great tzatziki:

Tips for Tzatziki preparation…

  1. Cucumber Preparation: Grate the cucumber and sprinkle it with salt; let it sit for about 10 to 15 minutes. This will draw out excess moisture. Once done, squeeze out any remaining liquid using a clean cloth or paper towel.
  2. Mixing Ingredients: In a bowl, combine the strained cucumber, Greek yogurt, minced garlic, olive oil, vinegar or lemon juice, and chopped herbs. Mix well until fully combined.
  3. Adjust Seasoning: Taste your tzatziki and adjust the seasoning with salt, pepper, or additional herbs based on your preference.
  4. Chill: For the best flavor, let  tzatziki chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  5. Storage: Tzatziki can be stored in an airtight container in the refrigerator for 3 to 5 days. The flavors may intensify over time, especially the garlic.

  • Greek Yogurt: Use full-fat Greek yogurt in Tzatziki for creaminess and a richer flavor.
  • Cucumber: Use a seedless cucumber (like English cucumber) or remove the seeds from a regular cucumber to avoid excess moisture.
  • Garlic: Fresh garlic is key for good Tzatziki; adjust the amount based on your taste preference, as it can be quite strong.
  • Olive Oil: A good-quality extra virgin olive oil adds richness and enhances the flavor.
  • Vinegar or Lemon Juice: Adds acidity and brightness; you can use either based on your preference.
  • Fresh Herbs: Dill is traditional in Tzatziki, but you can also use mint or a combination for added freshness.
  • Salt: Proper seasoning is essential.

Tzatziki is a seasoned concoction of cucumbers, yogurt, olive oil and yogurt.

Ingredients

Units Scale

4 cucumbers
3 cloves garlic, peeled and minced
1 tablespoon olive oil
Salt and pepper, to taste
2 cups yogurt, or yogurt and sour cream mixed

Instructions

  1. Peel and seed the cucumbers, and put through a fine grater (not a blender). Allow to drain in a colander until the juices have stopped running.
  2. In a small bowl, mash the garlic with the olive oil, salt and pepper.
  3. Stir in the cucumbers and yogurt.
  4. Chill, covered, for 1 hour or more.
  5. Serve as a dip with crackers or raw vegetables.
