Traditional Beef Stroganoff is so easy to make, and it will impress all guests.

Beef Stroganoff or beef Stroganov is a Russian dish of sautéed strips of beef in a sauce of sour cream and wine. From its origins in mid-19th-century Tsarist Russia, it has become popular around the world, with considerable variation from the original recipe. Mushrooms are common in many variants. The recipe was most likely invented by a chef for the Stroganov family.

Ingredients

  • 1 (1 1/2 pound) lean sirloin steak
  • 4 tablespoons all-purpose flour
  • 2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup butter
  • 1 pound fresh button mushrooms*, sliced
  • 3/4 cup dry burgundy wine
  • 2 cups sour cream

Instructions

  1. Cut steak into thin strips across grain, then cut the strips into 2 inch lengths.
  2. Combine flour, salt and pepper.
  3. Dredge beef slices and shake off excess.
  4. Melt butter and brown meat well. Push meat to the side of the skillet.
  5. Add sliced mushrooms and cook until golden.
  6. Return beef to the center of the pan.
  7. Add wine; cover and simmer for 15 minutes.
  8. Add sour cream.
  9. Heat to serving temperature.
  10. Serve over rice or hot buttered noodles garnished with minced parsley.

Notes

If button mushrooms are small, they can be used whole.
