Mississippi Roast
Mississippi Roast is SO tasty. The leftovers make wonderful roast beef sandwiches also. You can also use this roast to make Mississippi Roast “Birria” Tacos. These are simply delicious, and it’s another good use for this particular roast. An earlier name for this dish is “To Die For Pot Roast.”

Birria Tacos
Birria is a stew from the State of Jalisco, Mexico. Here it is used to make delicious Birria Tacos. In this recipe the taco is filled, then fried with a bit of the beef broth. Very yummy!

Linda’s Midwestern Pot Roast
Once you cook pot roast in this manner, you will always want to make it this way. It’s fall-apart tender. The secret to good pot roast is coating it with flour and browning it well before baking.

Beef Burrito Filling
All the flavors of the Southwest are in this delicious Beef Burrito Filling. Oftentimes, toward the end of cooking time, I allow all the water to evaporate, then caramelize the bottom of the roast. After removing the roast and the vegetables, I add about 2 cups water and scrape up all the tasty bits left in the roaster. I add about 1 1/2 cups of this to the shredded beef. Additions to the tortilla Add plain cooked rice or Mexican Rice to the tortilla. Add refried black beans to the tortilla. (I use LaSierra Refried Black Beans. They’re fabulous, and they don’t contain any risky additives.)
