Sweet Hawaiian Chicken

Ingredients
Reserved pineapple juice
1/4 cup soy sauce
3 tablespoons cornstarch
1/3 cup brown sugar
1/3 cup ketchup
4 boneless chicken breasts, cut into large chunks
4 garlic cloves, minced
1/4 teaspoon pepper
1 (20-ounce) can pineapple rings, juice reserved
Green onions (garnish)
Instructions
- In a bowl, mix together well the pineapple juice, soy sauce and cornstarch.
- Add brown sugar and ketchup and mix well.
- Place chicken breasts in a slow cooker. Pour pineapple mixture over the top.
- Scatter garlic cloves and pepper over the top.
- Top with pineapple slices. Spoon some of the pineapple juice mixture over the top of the pineapples.
- Cover and cook on HIGH for 3 to 4 hours or on LOW for 7 to 8 hours. When the chicken has an internal temperature of 165 degrees F, it is ready to eat.
- Serve over hot, cooked white or brown rice.
Notes
The boneless chicken breasts may be left whole if desired.
