Ingredients

Reserved pineapple juice
1/4 cup soy sauce
3 tablespoons cornstarch
1/3 cup brown sugar
1/3 cup ketchup
4 boneless chicken breasts, cut into large chunks
4 garlic cloves, minced
1/4 teaspoon pepper
1 (20-ounce) can pineapple rings, juice reserved
Green onions (garnish)

Instructions

  1. In a bowl, mix together well the pineapple juice, soy sauce and cornstarch.
  2. Add brown sugar and ketchup and mix well.
  3. Place chicken breasts in a slow cooker. Pour pineapple mixture over the top.
  4. Scatter garlic cloves and pepper over the top.
  5. Top with pineapple slices. Spoon some of the pineapple juice mixture over the top of the pineapples.
  6. Cover and cook on HIGH for 3 to 4 hours or on LOW for 7 to 8 hours. When the chicken has an internal temperature of 165 degrees F, it is ready to eat.
  7. Serve over hot, cooked white or brown rice.

Notes

The boneless chicken breasts may be left whole if desired.
