How to cook Southwestern Grilled Pork Chops…

Grilling pork chops can yield delicious, juicy results if done correctly. Here are some tips to help you grill perfect pork chops:

Look for pork chops that are uniformly thick so that they will cook evenly on the grill.

Thoroughly pat the chops dry with paper towels. Excess moisture can lead to steaming instead of grilling, resulting in a soggy texture.

Allow the pork chops to sit at room temperature for about 30 minutes before grilling. This helps them cook more evenly.

Oil the grill grates with a thin layer of oil to prevent sticking.

Make sure the grill is preheated to medium-high heat (around 400 to 450 degrees F). This sears the meat and gives it a nice crust.

The Department of Agriculture has issued new guidelines for cooking muscle meats, including pork chops. They can be safely eaten  once they have been cooked to an internal temperature of 145 degrees F and rested for three minutes. For years the recommended internal temperature was 160 degrees F. Personally, I still don’t trust them to be safe unless they’re cooked to an internal temperature of 160 degrees F, so I will stick with that.

Ingredients

Scale
  • 4 thick cut pork chops
  • 2 tablespoons olive oil, divided
  • 1 packet taco seasoning, divided or 2 tablespoons homemade Taco Seasoning

Instructions

  1. Heat grill to 350 degrees F.
  2. Drizzle half of oil over the top of the pork chops.
  3. Sprinkle half of taco seasoning mix over the top of the pork chops. Rub seasoning and oil so the pork chops are covered on top.
  4. Flip pork chops over. Repeat with the remaining oil and taco seasoning so that both sides are coated. Let the pork chops rest for 15 minutes.
  5. Place on grill and grill for 6 to 8 minutes on each side.
  6. Remove from grill when pork reaches an internal temperature of 160 degrees F. Cover with aluminum foil, and let the chops rest for 5 to 10 minutes before enjoying. This will let the fibers of the meat relax and give you the tender, juicy pork chop you want!
