Ingredients

  • 2 pounds boneless skinless chicken thighs, well trimmed of fat, or boneless, skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 1/2 cups barbecue sauce (we prefer Sweet Baby Ray’s)
  • 1 (12 ounce) can root beer (we prefer A&W)

Instructions

  1. Place the chicken in the slow cooker.
  2. Mix together salt, pepper, garlic powder, onion powder, barbecue sauce and root beer. Pour over the chicken.
  3. Cover and cook on LOW for 5 hours or until chicken is very tender.
  4. Remove chicken from the slow cooker and let cool slightly.
  5. Shred chicken with 2 forks or an electric mixer and serve in buns as a sandwich or over rice.
