Ingredients

Cooking spray
1/2 cup vegetable oil
1/2 cup butter
2 cups granulated sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
1/4 teaspoon baking soda
4 large eggs
1 1/2 cups all purpose flour
1 1/2 cups whole wheat flour
2 cups saskatoons, blueberries, raspberries or strawberries, fresh or frozen

Icing

1 cup confectioners’ sugar
1 tablespoon butter
1 teaspoon almond extract
1 to 2 tablespoons milk

Instructions

  1. Heat oven to 350 degrees F.
  2. Spray a large 10 x 15-inch jellyroll pan with cooking spray.
  3. In a large mixing bowl, cream together oil, butter and sugar.
  4. Add eggs, vanilla extract and almond extract. Beat well.
  5. In a second bowl, combine baking soda and flours. Add to the oil and sugar mixture. Mix well.
  6. Spread 2/3 of the batter in pan. Sprinkle with saskatoons or other berries. Using a teaspoon, drop the remaining batter over the berries and bottom layer.
  7. Bake for 30 to 40 minutes or until cake tester inserted in base of bars comes out clean.
  8. While the bar is baking, prepare the Icing. In a small bowl, mix together confectioners’ sugar, butter, almond extract and enough milk to make a smooth pourable icing.
  9. As soon as the bar is removed from the oven, drizzle icing evenly over the top. Allow to cool, and serve.

Notes

You can use coconut oil instead of vegetable oil in this recipe.
