Shortbread-like cookies filled with nuts and coated with sweet confectioners’ sugar, these delicious Russian Tea Cakes make an appearance at our house during the holiday season. These cookies are also known as Russian Snowballs. It is believed that these cookies originated in Lithuania.

The difference between Russian Tea Cakes and Mexican Wedding Cakes is that Mexican Wedding Cakes contain cinnamon.

Ingredients

Units Scale
  • 1 1/2 cups ground walnuts
  • 2 cups butter
  • 1 cup confectioners’ sugar
  • 4 cups all-purpose flour
  • 2 teaspoons vanilla extract

Instructions

  1. Heat oven to 300 degrees F.
  2. Mix all ingredients together; form into balls the size of walnuts.
  3. Bake for 30 minutes or until golden brown.
  4. While hot, roll in confectioners’ sugar.
  5. When cool, the balls may be rolled again in confectioners’ sugar, if desired.
