Pineapple-Cheese Casserole is a sublime dish to set on the table at Easter, Thanksgiving and Christmas. It’s guaranteed that there will be no leftovers! It’s also a very welcome dish at potlucks.

Pineapple-Cheese Casserole is a sublime dish to set on the table at Easter, Thanksgiving and Christmas.
Ingredients
1 (20 ounce) can crushed pineapple (drained, saving 4 tablespoons juice)
1 cup sharp Cheddar cheese, grated
3/4 cup granulated sugar
4 tablespoons all-purpose flour
4 tablespoons pineapple juice
1/4 cup butter, melted
1 cup crumbled Ritz crackers
Instructions
- Heat oven to 350 degrees F. Grease an 8 inch casserole dish.
- Combine all ingredients except butter and crumbs.
- Pour into the prepared casserole dish.
- Melt butter and mix with cracker crumbs. Spread over the top.
- Bake for 20 to 30 minutes.
Notes
This recipe can easily be doubled using a larger casserole dish. Pineapple chunks can be substituted for the crushed pineapple, if desired, but we prefer crushed pineapple.
