Ingredients

1 (20 ounce) can crushed pineapple (drained, saving 4 tablespoons juice) 1 cup sharp Cheddar cheese, grated 3/4 cup granulated sugar 4 tablespoons all-purpose flour 4 tablespoons pineapple juice 1/4 cup butter, melted 1 cup crumbled Ritz crackers

Instructions

  1. Heat oven to 350 degrees F. Grease an 8 inch casserole dish.
  2. Combine all ingredients except butter and crumbs.
  3. Pour into the prepared casserole dish.
  4. Melt butter and mix with cracker crumbs. Spread over the top.
  5. Bake for 20 to 30 minutes.

Notes

This recipe can easily be doubled using a larger casserole dish. Pineapple chunks can be substituted for the crushed pineapple, if desired, but we prefer crushed pineapple.
