Old Fashioned Fresh Peach Pie
You can use a full top crust for this fresh peach pie or use a lattice crust as shown in the picture.
Ingredients
5 cups peaches, peeled, diced1/4 cup brown sugar (packed)
1/2 cup granulated sugar
1 to 2 tablespoons lemon juice
3 tablespoons cornstarch
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 pinch salt
1 double crust for 9 inch pie
Instructions
- Mix the first 4 ingredients; let stand for 1 hour.
- Heat oven to 450 degrees F.
- Mix the cornstarch, cinnamon, nutmeg and salt.
- Pour syrup from peaches into a saucepan; cook until thick and clear. Mix with peaches, stirring gently.
- Place peach mixture on bottom crust of pie shell. Roll top crust and place over peaches.
- Bake for 10 minutes.
- Reduce oven temperature to 350 degrees F for 30 minutes.
- Let pie cool for a while before serving.
