Ingredients

  • 5 cups peaches, peeled, diced
  • 1/4 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 to 2 tablespoons lemon juice
  • 3 tablespoons cornstarch
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pinch salt
  • 1 Double crust for 9-inch pie

Instructions

  1. Mix the first 4 ingredients; let stand for 1 hour.
  2. Heat oven to 450 degrees F.
  3. Mix the cornstarch, cinnamon, nutmeg and salt.
  4. Pour syrup from peaches into a saucepan; cook until thick and clear. Mix with peaches, stirring gently.
  5. Place peach mixture on bottom crust of pie shell. Roll top crust and place over peaches.
  6. Bake for 10 minutes.
  7. Reduce oven temperature to 350 degrees F for 30 minutes.
  8. Let pie cool for a while before serving.
