- 1 Graham cracker crust
- 1 small box lemon Jell-O
- 1 cup hot water
- 1 (8 ounce) package cream cheese
- 1 cup granulated sugar
- 1 (20 ounce) can pineapple, drained
- 1 large can evaporated milk, iced (approximately 2 hours in freezer)
- 1 teaspoon vanilla extract
Instructions
- Stir Jell-O into hot water, set aside.
- Cream together cream cheese and sugar.
- Add vanilla extract.
- Whip iced evaporated milk until stiff.
- Add cooled Jell-O to cheese mixture. Add to whipped milk. Mix in pineapple.
- Pour into pan, and refrigerate overnight.
- Garnish as desired.
