Naked Chiles Rellenos

Naked Chiles Rellenos is my version of chiles rellenos that doesn’t use a batter.

Ingredients

2 or 3 corn tortillas Avocado oil 3 whole roasted Hatch or Anaheim green chiles (we use Hatch) Oaxaca cheese 3/4 cup Red Chile Sauce Cheddar cheese

Instructions

  1. Heat oven to 325 degrees F.
  2. Lightly oil a cast iron skillet with avocado oil. Arrange the corn tortillas over the bottom and about halfway up the side of the skillet.
  3. Stuff the green chiles with Oaxaca cheese and lay them on top of the tortillas.
  4. Ladle the red chile sauce over all.
  5. Sprinkle liberally with shredded Cheddar cheese.
  6. Bake for about 30 minutes until the cheese is melted and the corn tortilla is crispy.
