Instructions
- Heat oven to 325 degrees F.
- Lightly oil a cast iron skillet with avocado oil. Arrange the corn tortillas over the bottom and about halfway up the side of the skillet.
- Stuff the green chiles with Oaxaca cheese and lay them on top of the tortillas.
- Ladle the red chile sauce over all.
- Sprinkle liberally with shredded Cheddar cheese.
- Bake for about 30 minutes until the cheese is melted and the corn tortilla is crispy.
