Mom's Banana Nut Bread

Our Mother made this many times when we were growing up and continued making it well into her 80s. This recipe was submitted to a newspaper by Governor Lawrence W. Wetherby of Kentucky.

Ingredients

Units Scale
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 eggs (beaten)
  • 3 medium bananas (mashed)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped nuts

Instructions

  1. Cream butter and sugar until light and fluffy. Add eggs and mix thoroughly. Add bananas.
  2. Sift dry ingredients and add to banana mixture. Stir in nuts.
  3. Pour into greased 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan.
  4. Bake at 375 degrees F for 15 minutes, then reduce heat to 350 degrees F and bake for 45 minutes longer.
