- 8 russet potatoes, peeled and diced
- 1/2 onion, diced
- 1 can cream of chicken soup
- 1 (32 ounce) box chicken broth
- 1 (8 ounce package cream cheese
- 2 cups shredded Cheddar cheese, divided
- 10 to 16 ounces bacon
- Shredded Cheddar, sour cream and sliced green onion (garnish)
Instructions
- Add potatoes, onion, soup, broth, cream cheese and 1 cup Cheddar cheese to slow cooker. Stir.
- Cook on HIGH for 3 to 4 hours.
- Fry bacon, crumble, and add to slow cookeor about 40 minutes before done.
- Add remaining 1 cup Cheddar cheese to slow cooker about 25 minutes before done.
Notes
You can reserve some of the crumbled bacon for the top of each serving, if desired.
