Ingredients

Units Scale
  • 8 russet potatoes, peeled and diced
  • 1/2 onion, diced
  • 1 can cream of chicken soup
  • 1 (32 ounce) box chicken broth
  • 1 (8 ounce package cream cheese
  • 2 cups shredded Cheddar cheese, divided
  • 10 to 16 ounces bacon
  • Shredded Cheddar, sour cream and sliced green onion (garnish)

Instructions

  1. Add potatoes, onion, soup, broth, cream cheese and 1 cup Cheddar cheese to slow cooker. Stir.
  2. Cook on HIGH for 3 to 4 hours.
  3. Fry bacon, crumble, and add to slow cookeor about 40 minutes before done.
  4. Add remaining 1 cup Cheddar cheese to slow cooker about 25 minutes before done.

Notes

You can reserve some of the crumbled bacon for the top of each serving, if desired.
