4 cups diced cooked chicken, divided
1 can cream of chicken soup
8 ounces (1 cup) sour cream
2/3 cup milk
1 (4-ounce) can diced green chiles
1/4 cup diced onion
1 garlic clove, minced
Pepper to taste
12 corn tortillas
1 1/2 cups shredded pepper jack cheese
1 1/2 cups shredded sharp Cheddar cheese
Instructions
- Heat oven to 350 degrees F. Spray a 13 x 9 x 2-inch dish with cooking spray.
- Sauté the onion.
- In a large bowl, combine soup, sour cream, milk, chiles, onion, garlic and pepper.
- Line bottom of dish with 6 corn tortillas.
- Sprinkle with 2 cups of chicken and pour 1/2 sauce over top and spread to cover.
- Combine the two cheeses. Sprinkle with half of the cheese. Repeat layers.
- Bake for 30 to 40 minutes or until hot and bubbly.
- Let stand for 10 to 15 minutes before serving.
