Lassi
A Lassi is a popular traditional Indian yogurt drink made from yogurt, blended with spices, fruits or sugar. It is enjoyed as a refreshing beverage, especially in hot weather.

There are two main types:
Sweet Lassi: Made with yogurt, sugar, and sometimes flavored with rosewater, cardamom, or fruit like mango.
Salty Lassi: Contains yogurt, salt, and spices like cumin, chili, or mint.

Ingredients

2 cups plain yogurt
4 cups ice cold water
8 ice cubes
4 tablespoons honey
1 pinch ground nutmeg
1/2 teaspoon vanilla extract
1 pinch cayenne pepper
Salty Lassi
1 teaspoon cumin seeds
1 cup plain yogurt + yogurt for garnish
1 cup chilled milk
2 teaspoons lemon juice
1/2 to 1 teaspoon salt
1/2 cup ice cubes
Papaya Lassi (Papita Lassi)
1 cup ripe papaya, diced and mashed well
1 cup plain yogurt
2 cups chilled water
2 tablespoons lime juice
1 teaspoon salt
Dash of pepper
Few sprigs peppermint
Ice cubes
Sweet Papaya Lassi
1 cup ripe papaya, diced and mashed well
1 cup plain yogurt
2 cups chilled water
2 tablespoons granulated sugar
Rose water
Few sprigs peppermint

Mango Lassi
1 cup plain yogurt
1/2 cup mango pulp (fresh or canned)
1 cup crushed ice
2 tablespoons granulated sugar (use sugar substitute if desired)
Strawberry Lassi
1 pound fresh strawberries, trimmed and halved (3 1/2 cups)
1/2 cup granulated sugar
Rounded 1/4 teaspoon ground cardamom
2 cups plain yogurt (whole milk or low fat)
1 cup ice cubes
Banana Lassi
2 over-ripe bananas, broken into chunks
1 1/4 cups thick plain yogurt
1/3 cup milk, or more to taste
2 ice cubes
2 tablespoons granulated sugar
Instructions
Lassi
Yield: 6 servings
- In a large bowl, mix together yogurt, water and honey.
- Pour yogurt mixture into a blender.
- Add ice cubes, vanilla extract, nutmeg and cayenne pepper. Blend until thick.
- Pour into tall glasses and serve chilled.
Salty Lassi
Yield: 4 servings
- Dry-roast cumin seeds by cooking them over low heat in a small pan until you can smell the seasoning, about 2 to 3 minutes. Let cool, then grind.
- In blender, blend cumin seed powder with 1 cup yogurt, milk, lemon juice, salt and ice cubes.
- Divide among glasses and top each serving with a dollop of yogurt for garnish.
- Serve chilled.
Papaya Lassi (Papita Lassi)
Yield: 6 servings
- Beat or blend yogurt, then add water and beat or blend again.
- Add mashed papaya with all the seasonings. Beat or blend again.
- Pour into individual glasses.
- Garnish with mint and serve cold.
Sweet Papaya Lassi
Yield: 6 servings
- Beat or blend yogurt, then add water and beat or blend again.
- Add mashed papaya, sugar and rose water. Beat or blend again.
- Pour into individual glasses.
- Garnish with mint and serve cold.
Mango Lassi
Yield: about 4 servings
- Blend all ingredients in blender and refrigerate until ready to serve.
- Serve chilled.
Strawberry Lassi
Yield: 5 servings
- Puree strawberries with sugar, cardamom and a pinch of salt in a blender until smooth.
- Add yogurt and ice, then puree until smooth again.
Banana Lassi
Yield: 3 servings
- Blend bananas, yogurt, milk, ice cubes, and sugar together in a blender until smooth.
- Serve chilled.
Notes
Fat-free plain yogurt can be used for making low-fat drinks.
