This sweet, cake-like corn bread is served at family restaurants in Los Angeles. I’m not one for regular cornbread. I need my cornbread enhanced with sweetness, and this fits the bill perfectly!

Ingredients

Scale
  • 1 box Jiffy yellow cake mix
  • 1 box Jiffy cornbread mix

Instructions

  1. Heat oven to 350 degrees F. Grease a 9 x 13 x 2 inch baking pan.
  2. In separate bowls, mix yellow cake mix and cornbread mix according to instructions on the boxes.
  3. Blend both prepared mixes together.
  4. Turn into the prepared baking pan.
  5. Bake for 30 to 35 minutes, or until cornbread springs back when lightly touched.

Notes

CAUTION: Do not try to mix all the ingredients in one bowl. For some reason, this will not work, and the result will be cornbread that doesn’t rise well.
