John Wayne is famous around the Maricopa, Arizona, area as he was one of the owners of Red River Farms, a large feed lot near there. This recipe has been attributed to him, but I have serious doubts about that! Nevertheless, it’s delicious and I think John Wayne would have loved it.

Ingredients

2 pounds ground beef 1 (1 ounce) packet taco seasoning or 2 tablespoons Taco Seasoning 3/4 cup water 1 small onion, diced 1 green bell pepper, diced 2 1/4 cups Bisquick or Biscuit Baking Mix 2/3 cup water 1/2 cup mayonnaise 1/2 cup sour cream 12 ounces sharp Cheddar cheese, shredded and divided 2 Roma tomatoes, thinly sliced 1 (4 ounce) can diced green chiles

Instructions

  1. Heat oven to 325 degrees F. Lightly spray a 13 x 9 x 2 inch baking dish with nonstick cooking spray.
  2. In a large skillet, brown the ground beef until thoroughly cooked, then drain and return to the skillet.
  3. Add 3/4 cup water and the taco seasoning packet (or homemade seasoning); bring to a boil. Add the onion and bell pepper. Turn down the heat and simmer for three to five minutes or until the onions and peppers begin to soften. Set aside.
  4. In a small bowl mix together the biscuit mix and 2/3 cup water to make a soft dough. Press the dough into the bottom and up the sides about 1/2 inch in the prepared baking dish.
  5. In a small bowl mix together the mayonnaise, the sour cream and half the cheese. Set aside.
  6. Spread the ground beef mixture evenly over the biscuit layer.
  7. Layer the sliced tomatoes over ground beef mixture.
  8. Layer the green chiles over the tomatoes.
  9. Evenly spread the sour cream mixture over the green chiles.
  10. Top with remaining cheese.
  11. Bake for 30 to 35 minutes or until edges are lightly browned.
