Ingredients

1 cup Herman Sourdough Starter 1/2 cup coconut oil or butter, melted 1 1/2 cups granulated sugar 3 large eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt Optional: 1 cup peeled and diced apple, chopped nuts, raisins or chocolate chips

Instructions

  1. Heat the oven to 350 degrees F. Grease and flour* a 9 inch cake pan.
  2. In a large bowl, combine the Herman starter, coconut oil, sugar, eggs and vanilla extract. Beat until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Fold in apple, nuts, raisins or chocolate chips if using.
  6. Pour the batter into the prepared cake pan. Bake for about 35 to 40 minutes, or until a wooden pick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Serve plain, with frosting or dusted with confectioners’ sugar.
