Georgia Peach Caprese

Georgia Peach Caprese is a fresh, sweet and savory dish that’s perfect for summer and pairs well with light wines or sparkling drinks.

Ingredients

4 large fresh, juicy Georgia peaches
4 tablespoons extra virgin olive oil
1 1/2 tablespoons balsamic vinegar
1 package fresh mozzarella cheese packed in water
16 leaves basil, sliced
Salt and pepper to taste

Instructions

  1. Slice peaches about 1/4 inch thick and arrange on a plate.
  2. Slice thin discs of mozzarella cheese and place on each peach. Top with a sprig of basil.
  3. Mix olive oil and balsamic vinegar. Pour over peaches.
  4. Add salt and pepper to taste.
  5. Serve.
