Ingredients
1 pound vermicelli pasta (or desired pasta)
1 pound medium shrimp, peeled and deveined
Salt and pepper, to taste
1 lemon, zest and juice
1/2 teaspoon red pepper flakes (optional for heat)
4 tablespoons butter
5 cloves garlic, minced
3 tablespoons freshly grated Parmesan cheese
Chopped parsley (optional garnish)
Instructions
Cook pasta in a large pot of boiling water until al dente.
While the pasta is cooking, heat olive oil or avocado oil in a large skillet over medium-high heat. Add the shrimp, salt, pepper, lemon zest and juice, and red pepper flakes, if using.. Cook for about 2 to 3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
In a microwave-safe bowl, mix butter and garlic. Microwave on HIGH for 45 seconds, or until melted. Stir.
Drain pasta, and transfer to a serving dish. Toss with garlic butter and shrimp.
Sprinkle with grated Parmesan cheese.
Garnish with parsley, if desired.
Serve warm.
