Furr’s Cafeteria Millionaire Pie

Furr’s Cafeteria’s Millionaire Pie is a nostalgic dessert featuring a dreamy pineapple and whipped cream filling.. I remember well those cafeterias in the Phoenix area back in the 70s and 80s. The food was wonderful.

No, Furr’s Cafeteria never used cream cheese or sweetened condensed milk in their Millionaire Pie nor did they use Graham cracker pie crusts.

Ingredients

2 cups sifted confectioners’ sugar
1/4 pound butter, softened
2 large eggs (or 1/2 cup pasteurized egg substitute)
1/8 teaspoon salt
1/4 teaspoon vanilla extract
2 (9-inch) pie crusts, baked
1 cup heavy cream or 1 (8-ounce) container Cool Whip
1/2 cup sifted confectioners’ sugar
1 cup canned crushed pineapple, well drained and patted dry with a white paper towel
1/2 cup chopped pecans

Instructions

  1. Cream confectioners’ sugar and butter with electric mixer until fluffy.
  2. Add eggs, salt and vanilla extract.
  3. Beat until light and fluffy.
  4. Spread mixture evenly into baked pie crusts.
  5. Chill for at least 3 hours.
  6. Whip cream (unless using Cool Whip) until stiff.
  7. Blend in powdered sugar; fold in pineapple and pecans.
  8. Spread mixture on top of filling and chill thoroughly.
