Frosted Molasses Creams

I got this wonderful recipe from a fellow juror when I served on the 40th Maricopa County, Arizona, Grand Jury back in the 1980’s.

Ingredients

Bars 1/2 cup shortening 1/2 cup granulated sugar 1 egg, beaten 1/2 cup molasses 1/3 cup hot coffee 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 3/4 teaspoon salt 1/4 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon cloves Frosting 1/4 cup butter, creamed 2 cups confectioners' sugar 2 tablespoons warm coffee

Instructions

Bars

  1.   Heat oven to 350 degrees F. Grease and flour a 13 x 9-inch baking pan.*
  2.   Cream shortening and sugar.
  3. Blend in eggs, molasses and coffee.
  4. Add remaining ingredients and blend well.
  5. Pour into the prepared baking pan.
  6.   Bake or about 20 to 25 minutes. Check for doneness.
  7.   Frost while warm.

Frosting

  1.   Mix until smooth.
