Frangipane Tart
Frangipane is a sweet, almond-flavored filling commonly used in pastries and tarts. It is made from a mixture of almond paste, butter, sugar, eggs and a bit of flour.

How to glaze the raspberries (optional)…
Glazed fruit on tarts creates a sparkling, stunning and appetizing finish. The fruit is coated with a shiny glaze made from raspberry jelly, giving it a glossy, reflective surface. The glaze also adds a subtle sweetness and helps to preserve the fruit’s appearance and texture, ensuring it remains beautifully glossy and appealing for longer.
- Make sure that the filling is completely cooled.
- You will need about 1 tablespoon raspberry jelly for every cup of raspberries. This recipe will usually take about 4 cups of raspberries, so you will need 4 tablespoons of jelly.
- Heat jelly until it liquefies. This will only take 20 seconds or so in the microwave.
- Gently toss the melted jelly with the raspberries. Raspberries are fragile, so take care.
- Arrange the fruit atop the completely cooled filling.
The liquefied jelly may also be applied with soft strokes of a silicone pastry brush after arranging the fruit over the fillingl.

Sugar Cookie Dough
- Cream butter and sugar until creamy.
- Beat in eggs and vanilla extract.
- In a separate bowl, mix flour, salt, baking powder and gradually add to creamed mixture.
Refrigerate for two hours. - Roll out to 1/8 inch thickness and cover tart pan.
Almond Cream
- Cream butter and sugar.
- Add almond paste and cream again.
- Add eggs. Add flour and mix until incorporated into mixture.
- Fill the tart shell with almond cream filling to the top of pan.
- Bake for 25 minutes at 350 degrees F. Make sure top is brown and filling is firm.
- Let cool completely before adding the fruit on top.
Fruit
- After cooling, top with fresh fruit such as raspberries, mango, kiwi or strawberries.

* For the most accurate weight, weigh flour on a kitchen scale.
