About Tinting Coconut
Tinted coconut has many uses. Use it for “grass” to set Easter cakes on. Color the coconut for specific holidays for use in fruit salads, etc. It’s great for a truffle coating also.
Liquid food color is best for tinting coconut rather than using gel colors.
Five Cup Fruit Salad
For special occasions we use colored miniature marshmallows.

Ingredients
- 1 (11-ounce) can mandarin oranges, drained
- 1 (8-ounce) can crushed pineapple, drained
- 1 cup miniature marshmallows
- 1 cup sweetened coconut
- 1 cup sour cream
- 1/2 cup chopped pecans (optional)
Instructions
- Combine all ingredients in a bowl and mix well.
- Cover and refrigerate for several hours before serving.
Notes
Coconut may be tinted to match the holiday!
Colored marshmallows can be used for holidays such as Pascha and Christmas.
May use pineapple chunks, if desired. I prefer crushed.
A few halved green grapes may be added, if desired.
