Fig jam is a delicious spread made from ripe figs, sugar, lemon juice and spices. It’s perfect for breakfast, spreading on toast, or adding to desserts.

Ingredients

1 pound fresh figs 1/2 cup granulated sugar Juice of 1/2 lemon 1/2 teaspoon vanilla extract Dash of cinnamon (optional) 2 tablespoons water

Instructions

  1. Cut the stems off the figs and discard.
  2. Cut the figs into quarters.
  3. Put all ingredients into a saucepan and stir.
  4. Cook over medium heat, stirring, until the sugar is dissolved and the mixture is simmering.
  5. Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
