Basic Preparation Steps

  1. Mixing: Combine the flour and salt in a bowl, creating a well in the center to add the eggs.
  2. Kneading: Gradually mix the flour into the eggs until a dough forms, then knead the dough on a floured surface until it’s smooth and elastic.
  3. Resting: Let the dough rest for about 30 minutes to relax the gluten, making it easier to roll out.
  4. Rolling: Roll the dough out thinly with a rolling pin or pasta machine to your desired thickness.
  5. Cutting: Use a knife or a pizza cutter to slice the dough into your preferred noodle shape, whether it’s wide for lasagna or thin for fettuccine.

3 eggs

2 cups all-purpose flour (approximately)

1/2 teaspoon salt

Beef or chicken stock

Instructions

  1. Beat eggs until frothy.
  2. Add flour and stir until of dough texture.
  3. Knead until smooth.
  4. Turn into floured cutting board.
  5. Roll dough turning often until thin.
  6. Let noodle dough dry for 45 minutes, then turn and dry another 1/2 hour.
  7. Cut into noodles.
  8. Drop into boiling beef or chicken stock or soup.
  9. Reduce heat and cook at rolling boil for about 20 minutes.
  10. As the noodles boil, begin their own gravy.
  11. Season to taste.
