This is a traditional Irish stew originating from Dublin. It is a hearty dish made with sausages, bacon, potatoes, onions and carrots. The ingredients are simmered together in a flavorful broth, seasoned with a bouquet garni, garlic and black pepper.

How to make a Bouquet Garni

The bouquet garni (French for “garnished bouquet”) is a bundle of herbs usually tied together with string and mainly used to prepare soup, stock, and various stews. The bouquet is cooked with the other ingredients, but is removed prior to consumption.

4 sprigs parsley
2 bay leaves
1 teaspoon dried rosemary leaves

Put into a cheesecloth bag or place in a tea ball.

Ingredients

1 pound bacon slices 2 pounds pork sausage links Bacon fat or vegetable oil 2 large onions, sliced 2 whole cloves garlic 4 large potatoes, thinly sliced 2 carrots, thickly sliced 1 Bouquet Garni Black pepper Hard cider (apple wine) or apple cider Chopped parsley (garnish)

Instructions

  1. Lightly fry bacon until crisp. Place in a large cooking pot.
  2. Brown sausage in some bacon grease or vegetable oil. Remove and add to pot.
  3. Soften sliced onions and whole garlic cloves in fat, then add to pot with potatoes and carrots. Bury the bouquet garni in the middle of the mixture. Sprinkle with pepper. Cover with cider. Simmer for 1 1/2 hours over medium-low heat; do not boil.
  4. Remove the Bouquet Garni.
  5. Garnish with chopped parsley to serve.
