Dilly Green Beans

They are made by pickling fresh green beans in a brine infused with garlic, dill, and other seasonings, giving them a crisp texture and flavorful punch.

These delicious beans are not canned. They are “refrigerator” green beans.

How to use Dilly Green Beans…

Snacking: Enjoy them straight from the jar as a crunchy, savory snack.

Side Dish: Served cold or warm, dilly green beans make a flavorful side dish for grilled meats, sandwiches, or barbecues.

Salads: Chopped or whole dilly green beans can add crunch and flavor to green salads or pasta salads.

Appetizers: Wrapped in ham or prosciutto, or served with dips, they make a tasty appetizer.

Garnish: Use them as a colorful, flavorful garnish for platters, cheese boards, or charcuterie.

On Charcuterie Boards: Their tangy flavor complements cheeses, cured meats, and bread.

Other beans you might consider, though less traditional, include:

  • Wax Beans: Similar in texture to green beans, they work well.
  • Haricots Verts (French green beans): Thinner, more delicate, but still suitable.
  • Purple Beans: Adds a colorful twist; they turn green during pickling.

Ingredients

Units Scale
2 pounds green beans, trimmed to fit jars Several dill fronds, dill flowers, or seed-heads 2 tablespoons pickling spice 2 teaspoons dill seeds 2 cups apple cider vinegar 2 cups water 4 tablespoons kosher salt 2 tablespoons granulated sugar

Instructions

  1. Fit beans and a few dill fronds, flowers, or seed heads into wide mouth jars. Keep the beans as straight as possible to fit as many beans as you can in the jar.
  2. Divide the pickling spice and dill seeds among the jars.
  3. Heat the apple cider vinegar, water, sugar and salt in a small sauce pan, stirring to dissolve the salt and sugar.
  4. When it comes to a boil pour the hot brine over the beans, to fill the jars. The brine needs to fully cover the beans. If necessary you can top off with more water.
  5. Let cool, then put the lids on and refrigerate for 24 hours before eating.

Notes

A small, dried red pepper may be added to each jar, if desired.

Dilly Green Beans will stay fresh in the refrigerator for 2 weeks or more.
