Ingredients

  • 2 chicken breasts
  • 1 can cannelloni beans, drained and rinsed
  • 1 can corn, undrained
  • 1 (10-ounce) can Ro*Tel tomatoes with green chilies, undrained
  • 2 jalapeño peppers, seeded and deveined
  • 1 envelope Ranch dressing mix
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1/2 cup water
  • 1 (8-ounce) package cream cheese, cut into chunks

Instructions

  1. Add chicken to the slow cooker first. Add remaining ingredients except the cream cheese, on top of the chicken. Mix it up well.
  2. Add cream cheese to the top.
  3. Cover, and cook on LOW for 6 to 8 hours, then stir and shred the chicken before serving.
