Ingredients

  • 1/2 cup 1 stick butter
  • 1 cup brown sugar, packed
  • 1 (20-ounce) can pineapple slices, cut into small chunks
  • Maraschino cherries
  • 1 (18.25-ounce) box yellow or pineapple cake mix
  • Whipped cream (optional)

Instructions

  1. Heat oven to 350 degrees F. Pour melted butter in 13 x 9 x 2 inch pan and sprinkle with brown sugar.
  2. Arrange pineapple chunks and cherries on top of brown sugar.
  3. Combine cake mix with water, oil and eggs as called for on the box in a large bowl. Beat with an electric mixer at medium speed for 2 minutes. Pour over pineapple and cherries in pan.
  4. Bake for 40 minutes or until a wooden pick inserted in the center comes out clean.
  5. Cool cake on wire rack for 5 minutes.
  6. Run knife around sides of pan to loosen cake. Invert cake onto serving platter.
  7. Drizzle any remaining pan juices over cake.
  8. Serve warm or cool with a dollop of whipped cream, if desired.

Notes

18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

At Christmas time, use both red and green maraschino cherries for a festive look.

After arranging pineapple and cherries in the pan, sprinkle 1/3 cup chopped walnuts or pecans over the top, then proceed with pouring the batter.
