Heat oven to 350 degrees F.
Meatloaf
- In a mixing bowl, combine the ground beef, onion, bell pepper, eggs, milk, cracker crumbs, shredded cheese, salt and pepper to taste.
- Form the mixture into a loaf shape, and place it in the center of a 9 x 13-inch baking dish.
- Bake for 30 minutes.
- While meatloaf is baking, make the Topping.
- Remove from oven, and spread half of the Topping over the top.
- Return the meatloaf to the oven and bake for another 30 minutes.
- Remove from the oven again, and spread the other half of the Topping on top of the meatloaf.
Bake for another 10 minutes; serve.
Topping
- In a bowl, combine the ketchup, brown sugar and mustard until well blended.
