- 1 medium onion, sliced
- 2 tablespoons butter
- 1 pound chicken livers
- 2/3 cup sliced mushrooms
- 1/4 cup white wine
- 2 teaspoons paprika
- 1/2 teaspoon salt
- Dash of pepper
- 1 tablespooon all-purpose flour
- 1 cup sour cream
- 1 cup long-grain rice, cooked
Instructions
- In a large skillet, sauté onion and mushrooms in butter until tender, but not brown.
- Halve each chicken liver and add to the skillet along with the wine.
- Stir in salt, pepper and paprika.
- Cover and cook over low heat for 8 to 10 minutes until livers are tender, but still pink inside, stirring frequently.
- Stir flour into sour cream, then stir into liver mixture. Heat through, but DO NOT allow to boil.
- Serve over hot cooked rice.
