Ingredients

  • 1 medium onion, sliced
  • 2 tablespoons butter
  • 1 pound chicken livers
  • 2/3 cup sliced mushrooms
  • 1/4 cup white wine
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • Dash of pepper
  • 1 tablespooon all-purpose flour
  • 1 cup sour cream
  • 1 cup long-grain rice, cooked

Instructions

  1. In a large skillet, sauté onion and mushrooms in butter until tender, but not brown.
  2. Halve each chicken liver and add to the skillet along with the wine.
  3. Stir in salt, pepper and paprika.
  4. Cover and cook over low heat for 8 to 10 minutes until livers are tender, but still pink inside, stirring frequently.
  5. Stir flour into sour cream, then stir into liver mixture. Heat through, but DO NOT allow to boil.
  6. Serve over hot cooked rice.
