Maid-Rites
The Angel brothers of Muscatine, Iowa, would be proud. Their loose meat sandwich, dubbed a Maid Rite and first served in 1926, is still being served today. Comfort food at its best, this ground beef mixture seasoned with chopped onion and beef bouillon is served on pillow-soft rolls. It’s stick-to-your-ribs great food. Those of you with recipes that call for ketchup in the recipe have got a FAKE recipe. Maid-Rite has NEVER added ketchup to their meat for their classic burger while cooking it. The secret is twice-ground ground beef (probably the cheapest you can find). The meat is very, very fine. We know all this because our family is from Muscatine!

Kentucky Hot Brown
The Kentucky Hot Brown, an open-face sandwich, originated at the Brown Hotel in Louisville, Kentucky, early in the 1900s. There are as many versions of the dish as there are cooks who make it. This is my favorite as it uses both turkey and ham. Use more bacon if you would like more than one slice on each sandwich. You can skip the 1/4 cup cheese over the tomatoes, if desired. We think it adds a nice extra touch. If you skip this step, just remove from the oven after 10 minutes and lay the tomato slices and bacon on top of the sandwich.
