Picadillo (Mexican-Style Ground Beef)
To make Picadillo, ground beef and potatoes are simmered in seasoned tomato sauce. This dish is popular in Mexico and in the Philippines.

Carne en su Jugo
Diced steak cooked in a spicy green tomatillo sauce. The name means “Meat in its Juices.” It originated in the Mexican region of Guadalajara.

Yucatan Roast Pork (Cochinita Pibil)
This was originally prepared by the Mayans in ovens dug into the earth and lined with stones. The meat was wrapped in seaweed or banana leaves and left to roast slowly in its own juices. The most common way to serve Cochinita Pibil is in 6 inch corn tortillas.

Crispy bits of very flavorful pork is the base for these delicious street tacos.

Torta Ahogada
This is a savory sandwich made famous in the Mexican State of Jalisco. It is served everywhere in Guadalajara, which is where we ate our first Tortas Ahogada.

Huevos Rancheros
Huevos Rancheros, “rancher’s eggs,” is a popular breakfast dish consisting of eggs served in the style of the traditional large mid-morning fare on rural Mexican farms. The basic dish is composed of fried eggs served on lightly fried corn tortillas topped with salsa. Refried beans, Mexican-style rice and slices of avocado or guacamole are common accompaniments.

Flour Tortillas
We use a flat, round cast iron skillet (comal) to make these. These tortillas are so soft, they will almosts melt in your mouth! Yummy!
