Chicken is marinated in a flavorful vinegar marinade and then grilled to perfection. To make this chicken roadside-style, use boneless chicken tenderloins and brush with barbecue sauce the final minutes of grilling.

Mexican Rice
This is our own go-to recipe for perfect, fluffy Mexican rice every time. We have often wondered why we have to mix restaurant Mexican rice with refried beans to make it more palatable. This rice is our own creation. It is certainly not bona fide Mexican rice, but we like it much better. We think you will also!

Beef Burrito Filling
All the flavors of the Southwest are in this delicious Beef Burrito Filling. Oftentimes, toward the end of cooking time, I allow all the water to evaporate, then caramelize the bottom of the roast. After removing the roast and the vegetables, I add about 2 cups water and scrape up all the tasty bits left in the roaster. I add about 1 1/2 cups of this to the shredded beef. Additions to the tortilla Add plain cooked rice or Mexican Rice to the tortilla. Add refried black beans to the tortilla. (I use LaSierra Refried Black Beans. They’re fabulous, and they don’t contain any risky additives.)
