- Heat oven to 350 degrees F. Grease and flour a 13 x 9 x 2-inch pan or a 12 x 3-inch round pan.
Cake
- Combine grated carrots, flour, white sugar, baking soda, baking powder, salt and ground cinnamon.
- Stir in eggs, oil (this cake is VERY moist), vanilla extract, pineapple, raisins (if using) and nuts. Mix well.
- Spoon batter into prepared pan.
- Bake for 30 minutes or until done.
- Let cool.
- Frost with Cream Cheese Frosting.
Cream Cheese Frosting
- Combine confectioners’ sugar, cream cheese, butter and vanilla extract. Frost the cool cake and decorate top with chopped nuts, if desired.
