Ingredients

Cake 2 cups Bisquick 2 tablespoons granulated sugar 1 egg 2/3 cup water or milk 1 teaspoon vanilla extract (optional*) Topping 1/3 cup Bisquick 1/3 cup firmly packed brown sugar 1/2 teaspoon cinnamon 2 tablespoons cold butter

Instructions

Cake

  1.   Mix all ingredients.
  2.   Sprinkle Topping over the top.
  3.   Bake in a greased 8 inch square cake pan at 400 degrees F for 20 minutes.

Topping

  1.   Mix until crumbly.

Notes

* Vanilla extract is not in the original recipe, but I think it makes a lot of difference. I always add it.

The original recipe calls for baking in a 9 inch pie plate, but we have found that an 8 inch square stainless steel cake pan works best at the same temperature for the same amount of time.

Bisquick Coffee Cake Variations

Cinnamon Streusel Coffee Cake

  1.   Classic cinnamon sugar streusel topping.
  2.   Optional: add chopped nuts like walnuts or pecans.

 Blueberry Coffee Cake

  1.   Fold fresh or frozen blueberries into the batter.
  2.   Top with a crumb streusel and a light glaze.

 Apple Cinnamon Coffee Cake

  1.   Mix chopped apples into the batter.
  2.   Sprinkle cinnamon and sugar over the top before baking.

 Chocolate Chip Coffee Cake

  1.   Incorporate chocolate chips into the batter.
  2.   Add a chocolate crumb or drizzle melted chocolate on top.

 Lemon Poppy Seed Coffee Cake

  1.   Add lemon zest and juice to the batter.
  2.   Mix in poppy seeds.
  3.   Top with a lemon glaze.

 Pumpkin Coffee Cake

  1.   Mix in canned pumpkin and spices like cinnamon, nutmeg and cloves.
  2.   Top with a spiced streusel.

 Banana Nut Coffee Cake

  1.   Mash ripe bananas into the batter.
  2.   Include chopped nuts such as walnuts or pecans.

 Raspberry Almond Coffee Cake

  1.   Swirl raspberry jam into the batter.
  2.   Top with sliced almonds and a sprinkle of sugar.

 

We have seen a recipe that added cinnamon to the batter and doubled the topping recipe. We tried it, but didn’t care for it. Absolutely nothing beats this original recipe from the Bisquick box.
