Ingredients
Blondie
1/2 cup (1 stick) unsalted butter, melted
1 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 ripe bananas, mashed
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt (omit if using salted butter)
1/2 cup chocolate chips and/or chopped nuts (optional)
Frosting (optional)
1/2 cup (1 stick) butter
3 cups confectioners’ sugar
1 1/2 teaspoons vanilla extract
3 tablespoons hot milk
Instructions
Heat oven to 350 degrees F Grease or line a 9-inch square baking pan with parchment.
Blondie
- In a large bowl, combine melted butter, brown sugar, eggs, vanilla extract and mashed bananas until smooth.
- In a separate bowl, whisk together flour, baking powder and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chips or nuts if using.
- Pour batter into prepared baking pan and spread evenly.
- Bake for 25 to 30 minutes, or until a wooden pick inserted in the center comes out clean.
- Cool before slicing and serving.
- Allow brownies to cool slightly until warm (but not hot) before frosting.
Frosting (optional)
- In a large saucepan, heat butter over medium heat until it turns a medium brown color. Watch carefully.
- Remove from heat, whisk in confectioners’ sugar, adding milk gradually to achieve a smooth, spreadable consistency.
- Stir in vanilla extract.
- Pour frosting over warm banana bread brownies and smooth with a spatula.
- Allow to cool completely before cutting into squares.
