Arizona Pecan Brittle

I received this recipe from a fellow grand juror when I served on the 40th Maricopa County Grand Jury back in the 1980s. Her family owns a pecan grove!

Ingredients

Units Scale
  • 2 cups granulated sugar
  • 2/3 cup light Karo syrup
  • 3 cups pecans
  • 1/4 cup water
  • 3 teaspoons baking soda

Instructions

  1. Line a cookie sheet with aluminum foil and spray Pam over it.
  2. Combine sugar, Karo syrup, pecans and water in a saucepan. Boil to the hard-crack stage.
  3. Remove from heat and immediately add the baking soda. Stir furiously! Pour onto prepared cookie sheet. Let cool, then crack into pieces.
