This pie is so easy to make because the entire lemon is used (minus the seeds). All the filing ingredients are mixed in a blender or food processor. This is definitely a tried and true recipe.

Lemons are grown in the southern regions of the state where the climate is favorable for citrus cultivation. The warm temperatures, ample sunshine, and well-drained soils make Arizona suitable for growing various citrus fruits, including lemons. The growing season typically lasts from late winter to early spring, with harvest occurring from late spring to early summer.

Ingredients

Pie Crust

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons granulated sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons milk

Filling

  • 1 large lemon
  • 4 eggs
  • 8 tablespoons butter, (melted
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups granulated sugar

Instructions

  1. Heat oven to 350 degrees F.

Pie Crust

  1. In a pie tin or glass pie pan, mix together flour, salt and sugar. Mix together vegetable oil and milk. Pour onto dry and mix with fork until mixture forms a ball. With your hands, pat mixture into pan and up the sides, forming the crust.

Filling

  1. Cut lemon into small chunks leaving rind on. Remove seeds. In a blender or food processor, blend together lemon chunks, eggs, butter, vanilla extract and sugar until mixture is smooth and creamy. Pour into unbaked pie crust.
  2. Bake for about 40 minutes. If crust becomes too brown, cover gently with foil and finish baking.
  3. Serve with a dollop of fresh whipped cream, if desired.

Notes

A store-bought crust may also be used.

If lemons are small, use two!
