- Heat oven to 400 degrees F.
- Cream butter; add sugar and egg yolks. Beat until light.
- Stir in flour and salt.
- Add lemon and hot milk.
- In a clean bowl and with clean beaters, beat the egg whites until stiff but not dry.
- Fold the beaten egg whites into the filling.
- Pour into the unbaked pie shell.
- Bake in a 9-inch unbaked crust for 10 minutes; without opening the oven, set temperature to 350 degrees F and bake for 15 or 20 minutes more.
