Ingredients

2 tablespoons butter 1 cup granulated sugar 3 eggs, separated 4 tablespoons all-purpose flour 1/2 teaspoon salt Juice and zest of 1 lemon 1 1/2 cups hot milk

Instructions

  1. Heat oven to 400 degrees F.
  2. Cream butter; add sugar and egg yolks. Beat until light.
  3. Stir in flour and salt.
  4. Add lemon and hot milk.
  5. In a clean bowl and with clean beaters, beat the egg whites until stiff but not dry.
  6. Fold the beaten egg whites into the filling.
  7. Pour into the unbaked pie shell.
  8. Bake in a 9-inch unbaked crust for 10 minutes; without opening the oven, set temperature to 350 degrees F and bake for 15 or 20 minutes more.
