Zuppa Toscana

Zuppa Toscana is a much-loved Italian potato soup, and it’s easily made in your slow cooker.

Ingredients

Units Scale
  • 1 pound Italian sausage
  • 3/4 teaspoon red pepper flakes
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 5 small cans chicken broth
  • 6 potatoes, peeled and chopped
  • 1 cup whipping cream
  • Kale, chopped (as much as desired)

Instructions

  1. Brown sausage with red pepper flakes.
  2. Saute onion and garlic in sausage grease.
  3. Add chicken broth, potatoes, sausage and onion to slow cooker.
  4. Cook on HIGH for 3 to 4 hours or on LOW for 5 to 6 hours.
  5. Add whipping cream and kale, and cook for 30 minutes longer.
