Ingredients

Units Scale
1 1/2 cups almond flour 1/2 cup tapioca starch (or arrowroot powder) 1/4 cup coconut flour 1 tablespoon baking powder (gluten-free) 1/2 teaspoon salt 4 large eggs 1/4 cup coconut oil or olive oil, melted 1/2 cup unsweetened almond milk (or other dairy-free milk) 1 teaspoon apple cider vinegar

Instructions

  1. Heat oven to 350 degrees F. Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together almond flour, tapioca starch, coconut flour, baking powder and salt.
  3. In a separate bowl, beat the eggs.
  4. Add melted coconut oil or olive oil, almond milk and apple cider vinegar. Mix well.
  5. Pour the wet ingredients into the dry ingredients and stir until fully combined. The batter will be thick.
