Sweet Soft Cherry Bread recipe

Ingredients

Bread 3/4 cup granulated sugar 1/2 cup milk 1/2 cup vegetable oil 1 egg 2 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 2 small jars maraschino cherries Icing 2 cups confectioners' sugar 2 tablespoons melted butter 1/3 cup maraschino cherry juice 1/2 teaspoon almond extract

Instructions

Heat oven to 350 degrees F. Butter a loaf pan.

Bread

  1. In a bowl, mix the sugar, milk, oil and egg.
  2. In another bowl, mix the flour, baking powder and salt.
  3. Stir dry ingredients into wet ingredients.
  4. Drain the maraschino cherries, reserving the juice.
  5. Chop the cherries in a food processor or with a knife.
  6. Gently fold the cherries into the dough mixture.
  7. Pour the batter into the prepared pan.
  8. Bake for 55 minutes.

Icing

  1. In a bowl, combine the confectioners’ sugar, melted butter, cherry juice and almond extract.
  2. Spread the icing on top of the bread.
