Sweet Potato Pie
There are those who favor sweet potato pie over pumpkin pie. I am one of them.

- 3 medium sweet potatoes
- 1 cup granulated sugar
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 3/4 cup cream (Carnation)
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1 egg, beaten well
Instructions
- Peel, quarter and boil the sweet potatoes until tender. Pour off water and whip until smooth.
- Add the remaining ingredients while the whipped sweet potatoes are hot. Mix well.
- Pour into a 9 inch pie shell, and bake at 350 degrees F for approximately 35 to 40 minutes or until a knife inserted in the middle comes out clean.
