Roasted Carrots with Honey and Butter

Ingredients

16 ounces baby carrots*
2 teaspoons extra-virgin olive oil
Sprinkle of salt
1/4 teaspoon pepper
1 1/2 tablespoons butter, melted
1 tablespoon honey
1 tablespoon fresh thyme, parsley, basil or rosemary

Instructions

  1. Toss cleaned carrots with olive oil, salt and pepper.
  2. Heat air fryer to 400 degrees F.
  3. Arrange carrots in an even layer in the air fryer rack or basket.
  4. Roast carrots for about 15 minutes or until browned and they reach your desired tenderness. They do not have to be flipped.
  5. Mix together melted butter, honey and one of the fresh herbs.
  6. Toss the carrots with the honey mixture and sprinkle on extra herbs and/or salt and pepper if desired.
