Pasta Fagioli

Pasta Fagioli (Pasta and Beans) is a hearty Italian soup made with ground beef, vegetables, tomatoes and beans.

Ingredients

2 pounds ground beef 1 onion, chopped 3 carrots, chopped 4 stalks celery, chopped 2 (28-ounce) cans diced tomatoes, undrained 2 (16-ounce) cans cannelloni beans or white kidney beans, drained and rinsed 3 (10-ounce) cans beef stock 3 teaspoons oregano 2 teaspoons pepper 5 teaspoons dried parsley 1 teaspoon Tabasco sauce (optional) 1 (20-ounce) jar spaghetti sauce 8 ounces pasta

Instructions

  1. Brown the beef and drain the fat.
  2. Place the beef in a slow cooker with the remaining ingredients except the pasta. Cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours. Add the pasta 30 minutes before eating.
  3. Serve with crusty warm bread.

Notes

If you do not have a large slow cooker, cut the recipe in half.
