Mock Apple Pie

Our Mother made this Mock Apple Pie when we were growing up in the 1940s and 50s. You would swear that there are apples in the pie!

Ingredients

Pastry for two crust 9-inch pie 36 Ritz crackers 2 cups water Butter 2 cups granulated sugar 2 teaspoons cream of tartar 2 tablespoons lemon juice Grated rind of 1 lemon Cinnamon

Instructions

  1. Roll out bottom crust of pastry and fit into 9-inch pie plate. Break Ritz crackers coarsely into pastry-lined plate.
  2. Combine water, sugar and cream of tartar in saucepan; boil gently for 15 minutes.
  3. Add lemon juice and rind. Let cool.
  4. Pour syrup over crackers; dot generously with butter and sprinkle with cinnamon. Cover with top lattice or full crust. If using a full crust, make decorative cuts in the top. Trim and flute edges together.
  5. Bake at 425 degrees F for 30 to 35 minutes, until crust is crisp and golden.
  6. Serve warm.
