Mexican Shrimp Cocktail recipe

Mexican Shrimp Cocktail, known as “Cóctel de Camarones,” is a flavorful and refreshing seafood appetizer popular in Mexico and the Southwestern United States.

2 pounds shrimp 2 celery stalks, sliced thin 1 jalapeño, seeded, finely chopped 1 cucumber, chopped 2 avocados, peeled, pitted, chopped 2 handsful fresh cilantro, chopped 1/2 small white or yellow onion, finely chopped 2 limes, juice and zest 1 orange, juice and zest 11 1/2 ounces canned tomato juice 1/2 cup tomato sauce 2 garlic cloves, grated Hot sauce, to taste Salt and pepper, to taste

Instructions

  1. Bring a large pot of water to a boil. Add shrimp and boil until they curl into a loose C shape and are cooked through. Drain and transfer to ice or cool under water. Cut shrimp into bite-size chunks if they are large, leaving about 4 whole shrimp for the top of each appetizer.
  2. In a large bowl, combine cut-up shrimp, celery, jalapeño, cucumber, avocado, cilantro and onion.
  3. In a separate bowl, combine lime juice, orange juice, tomato juice, tomato sauce, garlic, hot sauce, salt, and pepper. Stir this mixture and pour into each glass. Add the whole shrimp to the top of the glass.
  4. Chill for at least 1 hour before serving.
